The applications of SFE are based on the
experimental observation that many gases increase their dissolution power when
compressed above a critical point (Brunner, 2003). Some other studies have discussed different supercritical applications,
especially using carbon dioxide  gas
as Supercritical Fluid. Liza et al.
(2010) studied the working  of the SFE
technique for extracting lipid compounds such as  phytosterols,tocopherols, policosanols and
free fatty acids from sorghum and their preventive capacities of thesse in many
diseases. On the other hand, scientific studies indicate possible antioxidant
effects of many spices such as sage. rosemary, oregano and thyme  among others (Cavero et al., 2006). Due to these properties, Cavero et al. (2006) assessed the possibility of using oregano leaves as a
source of antioxidants under a wider range of extracting conditions (different
temperature and pressure and considering ethanol as a co-solvent). Their
results showed that the extracts obtained by SC-CO2 exhibit higher
antioxidant potential   especially
when   co-solvent is  added against the DPPH (2, 2-diphenyl-1-picrylhydrazyl)
radical. In this context, SC-CO2 is important for the extraction of
natural compound   and in food industry, as  it allows the extraction of thermally labile
and easily oxidized compounds (Herrero et
al., 2010).

Nowadays, SFE is  very much used
in many industrial applications including 
fatty acid refining, extraction of essential oils and flavors from
natural sources with potential use in nutraceuticals and functional foods  and coffee decaffeination (Daintree et al., 2008). SFE   is an
important alternative to traditional  extraction methods using organic solvents for
extracting active  biological compounds
(Wang & Weller, 2006). Overall  to
develop a successful and efficient  SFE
many  factors are to be considered
including  raw materials, co-solvents and
extraction conditions for the extraction of a particular compound of interest
with a aim  to maximize the extraction
yield. In addition  it has been proved
with tremendous  success that SFE can be
used to obtain active  microparticles
substances as dry powders in which activity 
and stability are maintained.
